Australian chef Lennox Hastie owns and operates Sydney's only wood-fuelled restaurant, Firedoor. With a background in Michelin Star kitchens, Lennox's culinary journey was transformed when he worked at Asador Etxebarri in Spain. This led him to open Firedoor in 2015, focusing on fire-based cooking of fish, vegetables and aged beef. In 2022 Lennox opened his second restaurant Gilda, a basque-inspired wine bar highlighting small plates and snack-style dining. Lennox's unique approach to his craft has earned him many accolades, including being named Chef of the Year in the Sydney Morning Herald Good Food Awards in 2020.
