Silo started in Australia in 2011 when artist Joost Bakker came up with the idea of not using a bin. The chef and owner, Douglas, worked hard to turn Silo into the world's first restaurant that doesn't produce any waste. In October 2019, Doug moved Silo to The White Building in London, partnering with CRATE Brewery.

Everything inside Silo has been created and repurposed to eliminate the use of waste. The venue, which sits along the River Lee Navigation works directly with local farmers embracing a farm-to-table philosophy. The space designed by Nina+Co embodies a minimalistic aesthetic by incorporating recycled furniture throughout the restaurant.
