180 g kingfish fillet

4 tbsp cooking salt
150 g snow peas
2-3 radishes

Juice of 1 lime
1 tsp sesame oil
1 tsp fish sauce
2 tsp pickled ginger juice
4-5 tbsp extra virgin olive oil
3 tbsp your choice of dashi or soy sauce (I have used a blend of both)
1 tbsp ponzu onions (see tips)
1 storebought dried fava beans (you can also use dried chickpeas)

Method

Tips

To prepare the fish begin by evenly coating it with the salt and sugar mixture. Ensure the mix is spread equally across the fish and let it absorb for around 20 minutes.
Meanwhile, prepare the vegetables and arrange them into a bowl. Set aside.
Next place the fish under a tap of running water to rinse off the salt and sugar mixture.
Dry the fish with a paper towel and lay it out on a clean chopping board.
With a very sharp knife (I’m using a sashimi knife) cut the fish lengthwise into equal slices. Then cut crossways into small cubes. Place the cubes of fish onto a plate. Set aside.
In a small jug combine the sesame oil, fish sauce, pickle liquid, oil and dashi. Stir with a spoon to blend the ingredients. Remember to taste the mixture to ensure the seasonings are right.
Pour the liquid onto the fish, and let it sit for a few moments.
While the fish is marinating, mash an avocado with a fork into a clean bowl, and drizzle with a little olive oil and a pinch of salt.

To serve

Prepare a large clean salad bowl and spoon in the avocado. Next add in the vegetables, placing them on top of one another, then the ponzu onions.
With a spoon gently scoop the kingfish into the bowl, and pour the remaining juices onto the veggies.
Add a sprinkle of sesame seeds onto the fish, and then add in the corn chips and the fava beans.
