These are phenomenal.

We started out wanting to create a recipe to make an epic cucumber dish as we had so many on the farm. This mushroom steak was to be the supporting role, but it was so good it stole the lead! Oyster Mushroom Steaks with Ginger and Sesame Cucumbers

Ingredients

Cucumber Salad

1 cucumber
1 clove garlic (finely diced)
1.5 cm piece ginger (finely diced)
1 tbsp sesame oil
1 tbsp tamari (or soy sauce)
1 tbsp maple syrup
1 tbsp brown sugar
1 tsp chilli

Mushroom Steaks

1 tbsp sesame oil (plus extra for frying)
1 tbsp apple cider vinegar
1.5 tbsp tamari (or soy sauce)
1.5 tbsp maple syrup
1.5 cm piece ginger (finely diced)
200 g oyster mushrooms

Method

Cucumber Salad

Slice the cucumber into 0.5 cm slices.
Place the garlic, ginger, sesame oil, tamari, maple syrup, brown sugar and chilli in a saucepan and mix to combine.
Place the saucepan over high heat and bring to the boil. Reduce heat to low and cook, stirring continuously, for 3–4 minutes or until thickened and reduced. The sauce will need to be thick enough to coat the cucumber.
Set the sauce aside to cool while you make the mushroom steaks.

Mushroom Steaks

To make a sauce for your mushroom steaks, mix together the sesame oil, apple cider vinegar, tamari, maple syrup and ginger in a glass.
Place a non-stick pan over high heat and add a little bit more sesame oil.
Add the mushrooms to the pan in a single layer so they have enough room to fry, you may have to do this in batches, and use a wooden spoon to flatten so they brown all over and evaporate more moisture.
Cook on each side for 2–3 minutes or until they start to brown.
Carefully add in enough of the sauce to lightly coat the mushrooms, but not so much that they are swimming in the sauce.
Repeat with any remaining mushrooms until they are all cooked and look fab.

Bringing It All Together

To plate up, add the cucumber to the cucumber sauce and mix well.
Divide cucumber salad and mushroom steaks between plates and enjoy!
