Step 1
Preheat the oven to 180°C fan-forced (200°C conventional).
Step 2
Remove the crown and skin of the pineapple. Cut the pineapple into quarters, trimming off any remaining skin.
Step 3
Set a fry-pan over on medium heat. Place 2 tablespoons of brown sugar into the pan.
Step 4
Before the brown sugar begins to caramelise, place the pineapple quarter into the pan, on top of the brown sugar.
Step 5
Add 1 cinnamon stick to the pan.
Step 6
On a chopping board, slice the vanilla bean through its centre lengthways. Use your knife to scrape the vanilla from the bean. Add the vanilla to the pan.
Step 7
Let the sugar and the pineapple cook together for a couple of minutes, letting the moisture from the pineapple to cook out.
Step 8
Add the butter to the pan.
Step 9
Reduce the heat to medium low
Step 10
Add a little more water to the pan. Place the pineapple (still in the pan) into the oven and cook for 10-15 minutes.
Step 11
Take the pineapple out of the oven. Add cream to the pan, however much you like. Mix the cream in with the sugar to create a sauce. Using a spoon, drizzle it over the top of the pineapple.
Step 12
Place a generous spoonful of the butterscotch sauce in the centre of the plate. Place the pineapple on top of sauce and top with a pinch of sea salt.
