Ingredients

Cauliflower

1 cup plain flour
1/2 tsp smoked paprika
1/2 tsp ground cumin
1/2 tsp garlic powder
1 head cauliflower (halved and cut into 1cm pieces)
1 cup buttermilk (or 2 eggs, lightly whisked)
1 cup breadcrumbs (mixed with 1-2 Tbsp olive oil)

Optional Grown-Up's Sticky Sauce

1 tbsp maple syrup (or honey)
1 tbsp soy sauce
2 tbsp sriracha
1 tbsp hot water

Method

Tips

Preheat oven to 180ºC fan-forced (200ºC conventional) and line a shallow baking tray with baking paper (or get your air-fryer ready, if you have one).
Add the flour and spices to a dinner plate and mix well.
Add the buttermilk (or egg) to a wide shallow bowl and the breadcrumbs to another dinner plate.
Carefully coat each slice of cauliflower first in the seasoned flour, then in the buttermilk and, lastly, in the breadcrumbs.
Transfer to the prepared baking tray or air-fryer tray.
If you're using the optional Grown-up's Sticky Sauce, combine all the ingredients in a bowl.
Roast for 20 minutes or until golden and crispy, turning halfway (or cook for approximately 14 minutes in an air-fryer, keeping a watchful eye). If using the optional sauce, baste the cauliflower in the last 4 minutes of cooking (or use as a dipping sauce).
Serve with your preferred sauce on the side.
