100 g duck fat
2 kg sebago potatoes (peeled and cut into 7cm pieces)
Salt flakes (to serve)

Method

Preheat oven to 180°C (200°C conventional).
Place the duck fat in a baking tray and place in the oven to heat through until the potatoes are ready to add.
Place the potatoes in a saucepan, cover with water and bring to the boil. Reduce to a simmer and cook the potatoes for 5 minutes to parboil. Drain, return to the saucepan and shake to fluff up the outside of the potatoes.
Working quickly, remove the tray with hot duck fat from oven and carefully add potatoes, stirring to coat.
Roast the potatoes, stirring occasionally, for 1 hour 30 minutes or until tender and golden.
Scatter with salt flakes to serve.
